Oatmeal Cookies!

Oatmeal Cookie Recipe 

They will look a lot like this!

Ingredients:

  • 2 sticks butter at room temperature (sub with 16 tbsp of buttery spread, any type of oil (except olive oil), 1 1/2 banana (although not everyone likes it with banana), applesauce, or pumpkin)
  • 1 cup packed brown sugar
  • 1/2 cup white sugar (you can use packed brown sugar)
  • 2 eggs (or 3 egg whites or 1/2 cup of thoroughly blended silken tofu)
  • 2 tsp vanilla extract
  • 1 1/4 cup all-purpose flour (or whole wheat, or 1/2 + 1/8 cup whole wheat + 1/2 + 1/8 cup all-purpose)
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 3 cups quick-cooking oats

Directions:

  • Preheat oven to 325° F.
  • Mix together butter, sugars, eggs and vanilla.
  • Sift in flour, baking soda, and salt and stir well.
  • Fold in oats.
  • Bake 11-13 minutes.
  • Let cool on the pan for at least 2 minutes so they don’t break.
